PALEO CINNAMON POPTARTS

Yall, since I gave up sugar in 2015, I. HAVE. NOT. EATEN. A. POPTART!!

Yes, you read that correctly! And as a recovering picky eater who grew up in the 90’s eating frozen pizzas, little debbies, and yes, poptarts, I won’t lie, at times a toasted Brown Cinnamon Poptart has sounded amazing!

It’s been on my list for a while to try making a clean version, but honestly I felt like it was too much work…but finally I gave in and did it, and there were NO REGRETS!

  2. the taste was TOTALLY worth it!

Here’s what I did!

PALEO CINNAMON POPTARTS

(makes 6 poptarts)

Paleo Cinnamon Poptarts

INGREDIENTS:

  • ⅔ cup cassava flour plus more for dusting

  • ½ cup almond flour

  • 1 teaspoon xanthan gum

  • ¼ cup coconut sugar

  • ¼ cup coconut oil

  • 2 eggs

  • 2 tablespoons maple syrup

EGG WASH INGREDIENTS:

  • 1 egg white

  • 2 tablespoons water

  • *Wisk together

FILLING:

  • 6 tablespoons coconut sugar

  • 1 tablespoon cinnamon

  • 3 tablespoons coconut oil

TOPPING:

  • 3 tablesppons coconut oil (not melted)

  • 1 tablesppons coconut sugar

  • 2 teasppons cinnamon

INSTRUCTIONS:

For Crust:

  1. Using a food processor, add in the flours, xanthan gum and coconut sugar, blend together.

  2. Then add in the coconut oil, eggs and syrup.

  3. Blend all together for 2 minutes. The dough will get a bit thicker.

  4. Remove dough from food processor and wrap tightly in plastic wrap; chill in fridge for one hour.

  5. Use some flour to dust a surface, and roll the dough out on it into a sheet that is 12"x 12"

  6. Use a pizza cutter, and cut 12 small rectangles, that are about 4" x 3" each.

Putting them together:

  1. Preheat oven to 350℉.

  2. Place half of the rectangles you’ve rolled out on a parchment lined cookie sheet.

  3. Spoon 1 tablespoon of filling in the center and spread around leaving a ½ inch border around the filling.

  4. Mix up the egg white wash, and brush a small amount of egg wash on the border where there is no filling.

  5. Using another, empty rectangle cover the filling. Pinch the sides together and brush with egg wash to get a good seal. (if they aren’t sealed, some of the good filling will leak out! Go over it again with the tip of a fork along the four sides of the Pop Tart.

  6. Repeat until all 6 Pop Tarts are filled and sealed.

  7. Brush the egg wash over the tops of all 6 poptarts

  8. Bake for 20 minutes.

  9. Let them cool for about 20-30minutes, and mix up the topping, then add it to the top

TOPPING:

  1. Mix unmelted coconut oil, cinnamon and coconut sugar together to create a paste

  2. It’s best to put this on after the poptarts have had a chance to cool some so it doesn’t slide off….BUT, if you can’t wait, just go for it and enjoy! (that’s what I did, and how it’s pictured)

FYI: I hope you enjoy these as much as we did! Don’t be intimidated by the instructions, it actually wasn’t too hard to make, and was so worth it! Also, I’m working on a better, creamier topping, so stay tuned, but for now, ENJOY!







The Best Way To Eat A Cookie....By Twos!

Sugar Free Cookie Sandwiches

Everyone has been loving my new cookie recipe, the EASY Chocolate Chip Cookies! 

And why wouldn't they....a cookie that has no refined sugar, so it's mostly guilt free, and perfect for dipping in your milk! Yep...you will love them too! 

Plus if you're someone who wants or needs a cookie that's gluten and dairy free, snag my PALEO CHOCOLATE CHIP COOKIE RECIPE HERE as another option you will love! 

So... let's get to the good part! How can you eat two cookies at once and it be totally OKAY, judgement free, and delicious! 

A COOKIE SANDWICH THAT'S HOW! 

Sugar Free Cookie Sandwiches

So basically, make a batch of one of my cookie recipes, then mix together this awesome, and easy cream cheese filling! Lather up the cookies, and BOOM! Delcious Cookie Sanwiches!

EASY CREAM CHEESE FILLING! 

  • 1 8oz block of cream cheese

  • 2-3 TBSP of honey

  • 2 TBSP almond milk

  • Dash of vanilla

-Add it all to a mixer and mix on high until smooth! Then scoop about 1-2 TBSP or desired amount between two cookies! Enjoy immediately, or cover and refrigerate to enjoy later. 

*You can also freeze these for later. Or for an "ice cream cookie sandwich" style dessert.

Farewell, I'm off to Yoga Training with some Paleo Snacks & a GIVEAWAY!

Wow I am so excited for the next several days! I am heading out to my Level 4 Yoga Training, which is four days packed of Yoga Knowledge! I will learn a ton, plus get to take Master Classes from some incredible instructors. Plus I also packed in a mini course one evening that is all about using essential oils in Yoga! (Yes I'm an essential oil believer! I use them on my son all the time!) Then, on Monday, July 20th I will go take my ACE Group Fitness Certification Exam which puts me one step closer to becoming a Fit4Mom Stroller Strides Instructor! (Pray for me!)

So, an exciting several days ahead of me. But from my mommy heart I'm a little timid since I will be leaving my son for 4 days....the longest I have left him yet! (Pray for me double time)

I can't believe it though, it was about 3 years ago, to the date, that I made the decision to start my Yoga Training. Here's the picture I posted on Facebook, July 29, 2013!

So what I'm loving most about my pack: 

1) The dried fruit! I got dried strawberries, which taste like gummy snacks! Even at our local natural food store, the strawberries, (and most fruits) are sweetened with sugar....which I just don't get, and it annoys me so much! I was relieved to see that these are just strawberries! My son and I both love them! 

2) Which brings me to the second awesome thing. My son loves it all! He's only one, but I feel comfortable feeding him all of this! Oh, and on that note, my husband loves it too. He sat down and ate an entire pack of beef jerky...which I gave him a hard time about. But being sugar free, my husband still eats some sugar, despite me not wanting him too. It's hard for us to find him good fulfilling snacks though, so getting Paleo Snacks from Steve's makes that easier! 

3) The GRANOLA! OMG I love it! If you look at most store bought granolas, they are packed with sugar. The one that we used to eat on a regular basis even has so much sugar in it. And I still haven't found a homemade recipe that I love. This one is so good and is cinnamon flavored, and I love cinnamon. 

4) And lastly.....they have Paleo, Sugar Free KETCHUP!!! Which this may not seem like a big deal to you. But since giving up sugar in January, I have had no ketchup. Well I take that back, I made my own once, but it wasn't incredible, and I only made it once. And they have tons of sauces. Which if you didn't know, lots of sugar hides in the sauces and dressings that you eat, so for me this is a relief!

Sugar Free Birthday Cake for My Son's 1st Birthday!

So....my son turned 1! I seriously cannot believe it!  This weekend we celebrated with a fox themed birthday!

So, if you listened to my most recent NO SUGAR JOURNEY update via my latest Vlog, then you will know that I have been trying my hand in a few cake recipes to find the perfect cake that my husband and my son would love for the party! 

Well, after about 6 recipes, I did find a cake that both my husband and my son liked....BUT my husband STILL wanted a regular cake for all of our guests to enjoy at the party.

SIDENOTE: If I hadn't made it totally clear, my husband hasn't gotten totally on board with my sugar free eating. I mean he is totally supportive of me, but he isn't all about it for himself. I don't buy him junk (no more Oreos for him), and I still try to keep most of his snacks sugar free as well, but at work, or at parties, he still has sugar. So although he liked the cake I made, he didn't prefer it as the only cake for the party! 

So....I reluctantly went and bought a dumb cake from SAM's and served it to everyone else. For my son though, I served a vanilla/banana cake with a cream cheese frosting, and he loved it! Plus several others wanted to give it a try as well, and for the most part I got positive responses. (he didn't know what to do with the entire cake on his tray, so we cut him a piece instead)

Now, before I share the recipe with you guys, I wanted to tell you about another cake I made. One of the cakes...it was actually the one we used on his actual birthday evening, which was on the 16th of April. It was just our little family at home, and Zander wanted nothing to do with this cake. Well come to find out, it was a hard, brownie consistency, not really a fluffy cake. BUT it was Paleo, Sugar-Free, and soooo good! It was a chocolate peanut butter cake, with a Greek Yogurt Cream Cheese icing. I absolutely loved it and will be making it again, and sharing the recipe with you guys. I actually took it with me to a girl's weekend in Austin, TX. and while  everyone else at cupcakes from a food truck, I enjoyed a nice cup of coffee, then had my yummy cake when we got back to our house. It was perfect! 

Anyways, on to this SUGAR FREE BIRTHDAY CAKE Recipe! 

I tried making several cakes sweetened with just bananas, or honey, etc. I tried various cakes that were made with coconut flower, or almond flower, but in the desire to please my husband as well, I settled on a "normal" cake recipe and just substituted the sugar for Stevia. (It was actually my first time using Stevia, and you can definitely taste it, but for me it was fine, and still a nice little treat). It was also the first time I intentionally fed my son something with grains. We decided to do grain free for his first year. (more details on this below) I also decided to add a banana in the recipe to make it sweeter, and my son loves bananas, so it was great for him.

 GRAIN FREE?!?

As I mentioned above, we decided to do grain-free for my son his entire first year because of things I have researched and read pertaining to children not being able to properly digest grains until after a year of age. Basically, in order for a baby to digest grains, they have to have a specific enzyme, called amylase, which they don't have yet. So when they get fed grains, they cannot fully or properly digest them, and in turn starts them off with a bad gut, which can lead to many more problems in their future! So, we decided to steer clear of them. 

Not we aren't all of a sudden going all grains, full force. We will slowly introduce them, but even then, we want to keep our son's diet more towards vegetables, fruits, and meats. So we will still keep the grains at a minimum.
