PALEO CINNAMON POPTARTS

Yall, since I gave up sugar in 2015, I. HAVE. NOT. EATEN. A. POPTART!!

Yes, you read that correctly! And as a recovering picky eater who grew up in the 90’s eating frozen pizzas, little debbies, and yes, poptarts, I won’t lie, at times a toasted Brown Cinnamon Poptart has sounded amazing!

It’s been on my list for a while to try making a clean version, but honestly I felt like it was too much work…but finally I gave in and did it, and there were NO REGRETS!

  2. the taste was TOTALLY worth it!

Here’s what I did!

PALEO CINNAMON POPTARTS

(makes 6 poptarts)

Paleo Cinnamon Poptarts

INGREDIENTS:

  • ⅔ cup cassava flour plus more for dusting

  • ½ cup almond flour

  • 1 teaspoon xanthan gum

  • ¼ cup coconut sugar

  • ¼ cup coconut oil

  • 2 eggs

  • 2 tablespoons maple syrup

EGG WASH INGREDIENTS:

  • 1 egg white

  • 2 tablespoons water

  • *Wisk together

FILLING:

  • 6 tablespoons coconut sugar

  • 1 tablespoon cinnamon

  • 3 tablespoons coconut oil

TOPPING:

  • 3 tablesppons coconut oil (not melted)

  • 1 tablesppons coconut sugar

  • 2 teasppons cinnamon

INSTRUCTIONS:

For Crust:

  1. Using a food processor, add in the flours, xanthan gum and coconut sugar, blend together.

  2. Then add in the coconut oil, eggs and syrup.

  3. Blend all together for 2 minutes. The dough will get a bit thicker.

  4. Remove dough from food processor and wrap tightly in plastic wrap; chill in fridge for one hour.

  5. Use some flour to dust a surface, and roll the dough out on it into a sheet that is 12"x 12"

  6. Use a pizza cutter, and cut 12 small rectangles, that are about 4" x 3" each.

Putting them together:

  1. Preheat oven to 350℉.

  2. Place half of the rectangles you’ve rolled out on a parchment lined cookie sheet.

  3. Spoon 1 tablespoon of filling in the center and spread around leaving a ½ inch border around the filling.

  4. Mix up the egg white wash, and brush a small amount of egg wash on the border where there is no filling.

  5. Using another, empty rectangle cover the filling. Pinch the sides together and brush with egg wash to get a good seal. (if they aren’t sealed, some of the good filling will leak out! Go over it again with the tip of a fork along the four sides of the Pop Tart.

  6. Repeat until all 6 Pop Tarts are filled and sealed.

  7. Brush the egg wash over the tops of all 6 poptarts

  8. Bake for 20 minutes.

  9. Let them cool for about 20-30minutes, and mix up the topping, then add it to the top

TOPPING:

  1. Mix unmelted coconut oil, cinnamon and coconut sugar together to create a paste

  2. It’s best to put this on after the poptarts have had a chance to cool some so it doesn’t slide off….BUT, if you can’t wait, just go for it and enjoy! (that’s what I did, and how it’s pictured)

Why We Shouldn't Give Our Kids Juice

As Springtime nears us, and in Texas, it's feeling especially near, since we have basically skipped our winter, it's making me really crave some fruity stuff!  Like Watermelon, Cantaloupe, and fruit drinks.

It's also this time of year that we tend to lean more towards giving our children fruit juice to drink more often than we normally do. 

Drinking fruit juice isn't all it's cracked up to be though. Even though our food industry really sales fruit drinks as healthy, and attractive for kids, I'm here to tell you why we shouldn't give our kids juice.

Don't worry though, I won't leave you hanging. I'm also going to give you my 5 Favorite Fruit Drink Recipes that you can try instead! 

Let's start by chatting about the lame store bought juices that are full of stuff other than just juice! Most store bought juices will have added things to them, sugar or high fructose corn syrup being some of the worst and most frequent ingredients found in them. So obviously you can tell that is no good! 

So how about freshly juiced juice from your own juicer at home! You know, I used to think...I won't buy store bought juice for my son, I will make him fresh juice from home! That is until I"met" JJ Virgin. When sharing my NO Sugar Journey with you all, which started in January of 2015, I mentioned that a lot of it was triggered by JJ's book The Virgin Diet. In that book, and in many of her podcasts she talks about why apple juice is worse for you than soda! (you can read a full post about it here, but I will summarize some of the info below).

Here's how JJ describes drinking juice in her article,"Consider the difference between a carrot and carrot juice, an orange and orange juice. You wouldn’t sit down and eat four oranges, but you could easily consume that amount in a glass of OJ."

Doesn't that make total sense!! And why does it matter you ask? 

Because when you juice fruit, you are taking out all of the fiber from the fruit, and so basically all you are getting is fructose, or sugar, and a lot of it! Even if it's the good kind of sugar, too much of a good thing isn't always good. Especially in this case. 

So imagine, we are giving our children a big hit of sugar every time we give them a glass of fruit juice! And for many parents, that's their go-to drink! And they think they are doing the right thing by getting the all natural juice, but either way, it's not good. 

Still not sure if it matters enough, here's why JJ Virgin claims that drinking apple juice is worse for you than a can of soda....

"Let’s look at the numbers. A 12-ounce glass of apple juice contains 39 grams or almost 8 teaspoons of sugar. A 12-ounce can of cola, by contrast, contains 33 grams (6.6 teaspoons) of sugar."

HOLY SMOKES! Now if that doesn't put it into perspective than I don't know what will. 

 

Somewhere along the way, someone decided that the official kids drink needed to be juice. Not sure why, but the way I see it, my kid doesn't need juice. He's never had it, so he doesn't even know about it. Now, if you child is "hooked" on fruit juice, don't fret. I've got the perfect solution to help you gradually ween them off the sugary stuff, and on to tasty, fruit drinks that won't harm their system.

My 5 Favorite Healthy Fruit Drink Recipes!

Let me preface, these are all fruit infused water drinks, but some great blends! So try them out and give them a chance. It might take a while to get used to them because they won't be as sweet as what you are used to! 

  1. Lemon & Mint
  2. Strawberry Basil
  3. Watermelon & Cucumber
  4. Lemon Balm & Raspberry
  5. Grapefruit & Mint

Just add the ingredients to water and let it sit for a few minutes to infuse the taste, then enjoy! Or make a big batch in a water pitcher and have it ready to pore and share with the family!

The Regrets of a Pregnant Woman....

Wow....it's been a little over a week since I found out I was pregnant!  Pregnancy Announcement: The Regrets of a Pregnant Woman

Anyways I will say that even just this past week has been super hard on me! I have had zero energy, and have felt....like crap! I have had no desire to cook food, and a huge desire just to go out and grab fast food when I'm hungry. 

I have been good at eating fruit when I need a snack. Either that or saltine crackers. It keeps coming to mind for me though what my doctor said when I went to my 10 week appointment for my son Zander's pregnancy. My husband asked how important nutrition was at this time.....(we had several arguments over my lack of nutrition in the first trimester of that pregnancy), and the doctor said...."Right now, it's really just about surviving and eating what she can." Ahhhh.....such a sigh of relief. So I am trying to keep that in mind during this time as well....although it is super hard. 

I will say I have truly been craving and wanting cereal! 

Now, if you don't remember, back in January 2015, I made the commitment to go SUGAR FREE!! That's right, I gave up sugar all together! In drinks, in foods, period. I was done with sugar. And it has been a great year so far! I have loved this lifestyle of not worrying about eating sugar and having that guilty feeling after a long weekend. I have even had fun in the kitchen trying out new recipes. Right now though, the last thing I want to do is be in the kitchen. 

And when I'm craving cereal, and EVERY SINGLE CEREAL has sugar in it, I won't lie, the Regrets of a Pregnant Woman start coming out. 

Like did I really commit to that? 

Doesn't pregnancy dismiss that? 

Surely all my followers would understand!? 

But no, I am staying committed! Even through these pregnancy cravings! I have loved this sugar free lifestyle and I knew if I got pregnant it would be hard. BUT, I want this to continue being my life even after 2015. Many have asked if I will stay sugar free after the year is up. (My original commitment was the year 2015). And my answer is YES I will stay sugar free! 

For now though, I will keep begging my husband to cook for me while I lay on the couch, or take me out when he just can't do it. And I will keep working hard at staying fit as well! I want this pregnancy to be a fit one! And I know if I stay away from cereal and all the other sugar cravings, I will not gain 70lbs like I did in my first pregnancy!

Plus my little man loves working out on the BOSU with me too! Plus if you include valslides, or paper plates under your feet along with a Bosu, you are getting an incredible workout!! That's what I did today for some side lunges. I put valslides under my feet and slid them out and back in for lunges! It was super hard!!!

Wow! It has officially been over half a year since I went sugar free! I cannot believe it! 
The journey has been amazing, and this lifestyle is incredible!
So today I want to share it with you! I want to help you get more energy and gain control of your life and eating habits!

Top 5 Tips to Kickstart Your Sugar Free Lifestyle

I have had multiple people ask me if after the year 2015 is up if I think I will go back to eating sugar, or if I will continue being sugar free. As many of you may be wondering as well. 
To me, giving up sugar has become who I am. It's not some deprivation I'm inclining myself to. It's just how I live now, and I like it. Now once the year is up, I may not be so strict as to not get the BBQ Sauce for a recipe since it has 1g of added sugar, but I also don't see myself heading to Dairy Queen to get a blizzard either. 
I love how I feel without sugar. 
I love knowing that I'm healthy. 
I love not worrying about counting calories.
I honestly eat what I want. Even breads (without sugar). I am not worried about having too many carbs etc. I stay away from most processed foods and eat real, whole foods, and because of that, I don't worry a lot about how much or of what I'm eating. 
I love the freedom I feel when it comes to being sugar free. No more worrying, or stressing over food or weight.
I love that my scales don't fluctuate back and forth.
I love that after a holiday weekend I don't feel burdened and remorseful for all the "crap" I ate.
I love that I don't look back on a weekend of celebrations and regret everything I chose to ate, thinking that I have to "start over" tomorrow because I ruined all my progress so far. 
There has been so much freedom gained since I went sugar free. All of the things listed above are things that we all tend to struggle with, and I love that those aren't a worry for me anymore. My weight has literally stayed consistent. I workout consistently, eat well, but even after a weekend of Mexican food with a little too much chips and salsa (tends to happen fairly often because I'm a chips and salsa fanatic), I don't have to worry about my weight going up! It's incredible!

Happy Friday Everyone!  With it being so hot outside, it's nice to have an ice cold drink in hand most of the day! Plus I don't know about you, but summertime just makes me crave fruity drinks! And there are plenty of healthy options for those, they just might not be the ones you are used to. Even for me, I used to love a Cherry Limeade from Sonic, but I haven't had one in well over a year, and even now, they have tons of sugar in them. 

It's also this time of year that we tend to lean more towards giving our children fruit juice to drink more often than we normally do. 

Today I'm going to share with you Why we shouldn't give our kids juice, as well as give you my 5 Favorite Summer Fruit Drink Recipes!

First off, why we shouldn't give our kids juice.

And the way that I look at it, my kid doesn't NEED juice. For some reason we have just made that the go-to drink for children...well either that or Capri Suns, (and don't even get me started on why Capri Suns aren't good for your kids). But why did we ever decide to make juice the kids drink? But since my kid has never had juice, then he has no grid for it. Which means, he's not missing out on anything or being deprived. I just give him other alternatives. If your child is "hooked" on fruit juice, then you might need to slowly ween them off, but keep reading and I'll share some healthy alternatives that are still yummy fruit drinks for the summer! 

Now before I move on, just to explain a little more, when you take the fiber out of the fruit, then all that fructose (sugar from fruit) goes straight to our liver. When fructose is delivered to us the right way, in the whole form of fruit, "things change for the better— our digestion slows down, we burn some energy extracting the fructose, and fructose moseys to our liver in a steady stream rather than a torrent."

Homemade Larabar Recipe

I don't know about y'all but when it comes to the weekend, I look forward to doing my grocery shopping because that means I can buy new ingredients and try new recipes! Especially since I started my journey of NO SUGAR IN 2015, I am loving trying out new, SUGAR FREE recipes!  So last weekend, I decided to try my hand at making something using dates as the sweetener. I've seen this in all sorts of healthy eating recipes. Dates are known as the natural sweetener for healthy, No Sugar Added recipes, but I have never used them. So, I decided to make my own Homemade Larabars! And what do you know, they turned out awesome! 

So, here's the recipe! I wish you a wonderful weekend full or fun times in the kitchen making these yummy goodies for the entire family! 

I'm telling you, take just an hour or less out of your weekend to prepare a batch or two of these for the week and use them in the kids lunch, or as their after school snacks! Think of how much better these are for them than any processed, store-bought snack that you usually give them. "HELLO...! Did you Hear me say NO SUGAR!" Don't make excuses, make these, and start creating healthy habits in your kiddos! (#LeaveYourLegacy) Yes, I'm trying to guilt you into this! I just know how easy it would be to by the boxed snacks rather than spend a little extra time making these, but it is so worth it

Gluten & Sugar Free Pizza Crust Recipe

Gluten & Sugar Free Pizza Crust by www.brittanysuell.com Here's to my first experience with making my own sugar free recipe, plus, I made it where it was Virgin Diet friendly, basically means Gluten Free and dairy free, so Gluten crust, no cheese, and no sugar! 

So if you were thinking...hm that pizza looks kind of weird, it's because there was no cheese, but honestly, I didn't even miss it much.  (Although, when I'm done with the Virgin Diet, I will go back to cheese eating! I'm a big cheese eater!) 

Now, if you are wondering...what is Gluten anyways, let me tell you.

Gluten is a protein found in many grains, breads, pastas and baked goods, as well as in many processed and prepared foods. It disrupts your digestion by damaging the microvilli of the small intestine, the place where we absorb our nutrients. Gluten also makes your intestines more permeable, which can lead to leaky gut, food intolerance, immune problems, inflammation, and the inability to absorb nutrients.                                             (taken from "The Virgin Diet" by JJ Virgin)

So, although, that fluffy, thick crusted pizza from your favorite pizza place is good, the mass amounts of gluten that have been put into those crusts, can create issues.  Not to mention if you are gluten intolerant, then this pizza will definitely work in your favor.  I mean I won't say that this was the best pizza I have ever had, but it was still very good, even my husband liked it. 

So let's get to it.

First, you preheat the oven to 350 degrees, then mix 1 Tbsp of yeast with 3/4 cup of warm water and set aside for 5 minutes for the yeast to activate. Mix 3 cups of Gluten Free Flour, 1 tsp of salt, and 1 tsp of baking soda in a large bowl. Create a whole in the middle of the dry ingredients, and pour in the yeast mix, 1 Tbsp of honey, 1 Tbsp of safflower oil, and the remaining 1/2 cup of warm water. Use a rubber or wooden spatula to mix together thoroughly.

Spray your pizza pan with a non-stick spray, Plop dough in the middle of pan and spread evenly about pan (dough is a tad crumbly). Dough should be about 1/4 of an inch thick around pan. Use extra flour or oil if the dough is too sticky to spread, then pop in oven and bake for 25 minutes.

After baking, take the dough out, it will most likely crack some. Then use my homemade, sugar free pizza sauce and spread it over the top, and top with your favorite pizza toppings. (I also added some minced garlic over the top of my crust before adding sauce. Just for some extra flavor).

No Sugar, Homemade Pizza Sauce

  • Use a can of Tomato Sauce (0g of sugar) 
  • 2 tbsp of Italian Seasoning (Mix of oregano, Basil, Thyme, etc)
  • 1 tbsp of garlic powder

This sauce was super easy, and totally yummy.  Plus, 0g of sugar! Which just FYI, the organic pizza sauce in my refrigerator right now has 4g of sugar. Which may not seem much to most, but if you eat various sauces, etc. throughout the day that all contain small amounts of sugar, it adds up. So, taking just a little time to make this homemade pizza sauce is a great choice for you and your family!

BYE BYE SUGAR!! Sharing my No-Sugar Menu!

So....if you listened to my Podcast this week, you know that I am starting a 1 year journey of taking SUGAR out of my family's diet! Bye Bye Sugar Menu from www.brittanysuell.com #leaveyourlegacy

WOAH! Did I seriously just commit to that!? Yep I did, and I'm excited about the journey! I know that it will be a challenge, but I am excited to see how no-sugar affects my body, my energy level, and so many other aspects of my life.  Plus, I am excited to explore other options, like how to have sweet treats that are sweetened naturally. Like cooking with dates....which I have never done, but I know many people do as a natural sweetener.

Anyways, so to Kick-Start my year of NO SUGAR, I decided to start with JJ Virgin's the Virgin Diet. It was after listening to a podcast featuring her, that I realized I need to do this.  There had been several things about sugar that had stuck out to me in the week's leading up to that, but once I listened to this podcast I knew it was something I had to do.  So on Sunday, I started a NO SUGAR, SOY, DAIRY, EGGS, CORN, PEANUTS, or GLUTEN diet.  The diet will last three weeks, and then each week after that I will add dairy, gluten, eggs, and soy back in, one at a time.  The basis of this diet is that a lot of time foods can cause food intolerances in our body which can lead to major issues. (FIND out more on my February PODCAST!) So, after you have cleansed your system of these foods you add them back in to see how you body reacts and if you can tolerate those foods.

So...you may be asking...if you are taking ALL of those things out!?! Then WHAT THE HECK IS LEFT! That's why I decided to share my Week 1 Menu with you guys, so that you can see that I am still eating lots of food, and lots of good food.  The hardest part is at night when I want to snack! So far though it has gone well, and I have already seen the scales move, like 5lbs down, which she claims will definitely happen when you do the Virgin Diet.

A few notes:

  • I actually started on Sunday, so we ate on the whole chicken throughout the week
  • I made enough for each meal to have leftovers the next day for lunches
  • I know I am eating a lot of the same things, but that is my choice! I love avocado and sweet potatoes! So that works for me! You can also have great salads for lunch.
  • I bought thick turkey slices from a deli for lunches.

Like I mentioned, the hardest part is not having snacks late at night.  I am planning to make some sweet potato chips and kale chips for next week to have as snacks when I'm craving something salty!

For me,  I'm doing it to make a better life for me and my family! I know that sugar has huge impacts on us that we aren't aware of, and I believe that if I raise my son, and change my lifestyle to be less sugar, then we will be healthier and feel better overall! So basically, I want to LEAVE A HEALTHY & ACTIVE LIFESTYLE for my family, and I believe this is part of it!! Teaching him to eat healthy and make wise choices and habits that will impact him for the rest of his life! And it really does help to REMEMBER WHY YOU STARTED! In all areas of life! Have a vision, a goal, a purpose in why you are doing it, so that when things get hard, you have motivation to fall back on! This will probably be true over and over again for me in 2015! I will constantly need to come back to this and REMEMBER WHY I STARTED!
