Pumpkin Cheesecake!

It's Thanksgiving week, and I don't know about you guys, but that means LOTS OF FOOD, and an espcially large amount of desserts with our family! 

So my favorite way to beat the Holiday Deprevation Blues...aka feeling like you are "doing without" because you are eating healthy, or on a diet....is to bring my own dessert! 

I love to take holiday favorites and make them healthier, and SUGAR FREE! I've got so many recipes like this in my SIMPLY SUGAR FREE COOKBOOK, which is ON SALE now! And that's what I did with this Thanksgiving, PUMPKIN CHEESECAKE that's amazing! 

Sugar Free Pumpkin cheesecake!

So I can come out of next week's holiday festivities feeling confident and proud that I didn't wreck all my efforts with one meal and leftovers! 

Seriously, when I gave up refined sugar almost 3 years ago, I remember the best feeling of accomplishment I had was after our first holiday weekend....It was 4th of July, and we had attended a huge party! So much food, and an entire dining room devoted to DESSERTS! So much dessert! 

I came home from that event, not feeling bloated, regretful, or guilty! I felt proud! I didn't step on the scale on Monday and say all these negative things to myself! The scale didn't jump up 5 lbs! Yes, I may have eaten some junk food [chips, hot dogs...], but no sugar! And it didn't affect my waistline or weight! 

I easily jumped right back into my working out and healthy eating routine! IT'S ALL ABOUT BALANCE, and this is one of my favorite ways to keep my balance! 

So here's to a well balanced, and delicious THANKSGIVING Meal!

Pumpkin Cheesecake! Sugar Free, Gluten Free, and delicious!

Pumpkin Cheese Cake

FILLING:

  • 16 ounces cream cheese
  • ½ cup plain Greek Yogurt
  • ½ cup organic stevia or monk fruit
  • ½ tsp vanilla extract
  • 2 eggs
  • 1 cup organic pumpkin puree

CRUST:

  • 1 ½ cups almond flour
  • ½ cup Collagen (I used the Mom Fuel Vanilla Collagen. If you don’t have this, you can just add another ½ cup of almond flour)
  • ½ cup chopped almonds
  • ½ cup melted coconut oil
  • 4 TBSP pure maple syrup
  • 1 TBSP cinnamon
  • 1 tsp pumpkin pie spice
  • Pinch of salt

INSTRUCTIONS:

  • Preheat oven to 350 degrees
  • Use mixer to combine cream cheese, Greek Yogurt, stevia, vanilla, and eggs. LEAVE PUMPKIN ASIDE
  • While the cream is mixing, use medium size bowl and a spatula to combine the almond flour, collagen, almonds, coconut oil, maple syrup, cinnamon, pumpkin pie spice, and salt for crust
  • Rub coconut oil into cupcake pan or a cheesecake spring pan. (if doing cupcake size, this will make 12-16 cupcakes)
  • Evenly divide the almond mixture into the pans or pan, and use your fingers to flatten the crust into the bottom
  • Set aside ¼ of the cream mixture
  • Using the remaining ¾ evenly divide it into the pan, leaving a ¼ amount of room on top
  • Take the remaining ¼ of cream that you set aside, and combine the pumpkin puree. Once combined, add it to the top of the cupcakes or pan. If doing a pan, drop it into dollops around the top, then take a butter knife and swirl it in for a fun swirl cheesecake
  • Bake for 20 minutes
  • Let cool on counter top for 20 minutes, then refrigerate for 1 hour before serving.

Homemade Fruit Rollup Recipe

Today, I'm joining in with the Fit Dish Link up to share one of my favorite healthy desserts. I wouldn't say it's my all the time, have to have it desserts, but it's such a good one, and great for this time of year since so many of these yummy fruits are in season!  The Fit Dish, favorite healthy desserts!

 

Now before I share the recipe with you, let me preface. This is a recipe that I revived from my blog archives from when we were the Naturally Fit Sisters. So coming from you from July 10, 2013. This was right before I got pregnant, and I weighed more then than I do now. 

I remember that summer, because I barely fit into any of my pants. I had gained a good 15 lbs (at least) from my "normal" weight. So all of my jeans fit so tight, so I just tried to avoid wearing them. Honestly I'm not sure why I had gained so much. I think it was just gradual. I barely at any vegetables at this time (unless they were rolled up in a recipe like this one). And I honestly had little control over my appetite/eating choices. I worked out and ran, but not a ton, and still my eating habits were so not on track, that even working out wasn't helping.

Anyways, this particular post was on a "Weightloss Wednesday," and I shared my weight. Now, today, in 2015, a year after having my son, I weigh in at about 148, and fit nicely into all of my clothes, which I am very thankful for. I actually tried on a shirt that I bought in China in 2008, that I remember getting to a point that I didn't fit in it, and it fit amazingly over the weekend! I was so happy because I love that shirt! 

So let me go ahead and share with you the post and recipe from 2013! 

ENJOY! And this is a great recipe to involved the kiddos in! But, the snack is yummy for adults as well! I LOVE IT!

"I weighed 160 this morning.

I started at 165 on June 16th, [2013], and today, on July 10th, [2013] I am at 160.

Today though, we have a wonderful recipe we want to share with you all!

Homemade, all natural fruit rollup recipe! No Sugar added, just lots of good fruits and veggies! by @brittanysuell

Here’s what you will need:

2-3 peeled and chopped APPLES

3-4 peeled and chopped CARROTS

1/2 a cup of BLUEBERRIES

1/2 a cup of STRAWBERRIES

1 tablespoon of HONEY

(you can add any of fruits or veggies you want to it really, this is just what I used. & the honey is in place of sugar that many recipes call for) [Yay, a sugar free recipe, before I went sugar free!]

YOU WILL ALSO NEED:  a food processor or high powered blender, and parchment paper

*You can also add some protein powder to it.  I have a Flavorless one, so it goes great in anything!

Once you have all of your fruits & veggies cut you put them in your food processor or blender.  I used a blender because most of my kitchen supplies were already packed.  It worked great though.

Once it is blended, this is where you mix the honey, and if you prefer your protein powder!

Then you lay out parchment paper on cookie sheets.  (we filled 3 of them), and you spread the mixture in a THIN layer across the parchment paper to fill the pan.

*You could also make little pancake size circles/blobs if you wanted.  We made big sheets like you see here, but we tore them into strips anyways, so individual blobs would work too.

Here’s the important part.  You then bake these things for 4 HOURS! Yes I said that right…..4 HOURS at the lowest temperature that your oven can go.  (Mine went to 170 degrees) We baked ours overnight and woke up to take them out, that’s because we started making them at 11pm! You will know they are done when every piece of it is dried out.  It shouldn’t have any wet or squishy pieces.

Then once it cools you pull it up from the parchment paper.  And like I said we tore ours into strips and rolled them up the best we could.

Although they may look a tad bit like bacon, they sure are yummy.  Big Sis & I both went home with a tub full.  I ate them for a healthy, all-natural snack for myself, and she let Noah enjoy them as a snack!

Seriously these are so good and such a healthy alternative to store bought, sugar filled fruit rollups!"

Healthy Choice Desserts

Last week I posted about our new adventures in Eating Clean! I am really excited to see where this takes me and my husband.  I have already felt changes in myself, and am excited to see and feel more!

When I first started thinking about making these changes, I realized I needed to find an alternative to snacks, or desserts.  I love cold desserts/snacks.  I love getting fro-yo, or Icee's, and I enjoy an occasional snack! Especially at night! So I had to think of something better for me than the norm.  I thought about making fun frozen treats, and the next day I saw a cook book just for that at Sam's! I bought it for $5.99....well worth it for me! Not only is this a great treat for me now, but it will be wonderful to have all of these fun recipes when I have kids.  Then I picked up these two packs of popsicle trays at Wal-Mart for $1.50 each!

The first popsicle I decided to try out was the Strawberry-Lemon Pop!

For this here's what you needed:

1-Cup of strawberries

1-Tablespoon of lemon

1-cup of milk

1/2-cup of yogurt (plain, but I used strawberry because that's what we had)

1-teaspoon of sugar

*At the time I made this I used Splenda, but I learned last week that it is better to use HONEY to sweeten things.  So that is what I used on the ones I made this week! & I have also been using that on my coffee too! :-)

**I also added my unflavored protein powder to add an extra punch of goodness in there!

Then you just stick it all in your blender until it is pureed.

Next you pour them evenly into the little trays! This recipe made a tray and a half of these!

Then I froze them overnight, and enjoyed them the next day!!

I'm telling you, you should definitely try these out! They are easy and fun, and can be all natural! I used all fresh, organic fruits, and organic milk & yogurt! So I feel great about eating these no matter what time of day it is! They could even double as a smoothie in the morning, with the protein and fruit, it's like a small smoothie on a stick!

Plus the kids will LOVE IT!

This is a great snack/treat for kids! Way better than store bought popsicles that are dripping with fake stuff and sugar!! :-)

My nephew loved them and had like 3 this weekend!
