The Best Way To Eat A Cookie....By Twos!

Sugar Free Cookie Sandwiches

Everyone has been loving my new cookie recipe, the EASY Chocolate Chip Cookies! 

And why wouldn't they....a cookie that has no refined sugar, so it's mostly guilt free, and perfect for dipping in your milk! Yep...you will love them too! 

Plus if you're someone who wants or needs a cookie that's gluten and dairy free, snag my PALEO CHOCOLATE CHIP COOKIE RECIPE HERE as another option you will love! 

So... let's get to the good part! How can you eat two cookies at once and it be totally OKAY, judgement free, and delicious! 

A COOKIE SANDWICH THAT'S HOW! 

Sugar Free Cookie Sandwiches

So basically, make a batch of one of my cookie recipes, then mix together this awesome, and easy cream cheese filling! Lather up the cookies, and BOOM! Delcious Cookie Sanwiches!

EASY CREAM CHEESE FILLING! 

  • 1 8oz block of cream cheese

  • 2-3 TBSP of honey

  • 2 TBSP almond milk

  • Dash of vanilla

-Add it all to a mixer and mix on high until smooth! Then scoop about 1-2 TBSP or desired amount between two cookies! Enjoy immediately, or cover and refrigerate to enjoy later. 

*You can also freeze these for later. Or for an "ice cream cookie sandwich" style dessert.

Prana, (they also have amazing pants/jeans in super fun colors). Lorna Jane, everything they have is super amazing! From leggings to fun graphic tanks, it's all cute and incredible quality! And if you need to run in somewhere more local, Old Navy is doing amazing in the fitness wear department! 

 

 

7) Subscription Box-it's the gift that keeps on giving. There are tons of health and fitness boxes that come once a month. You could send just one month and leave it up to the receiver to continue if they like it. Or most have the option for 3, 6, or 12 month subscriptions. There are things that involve snacks and food, to accessories and clothing. Here's a few to take a look at: Nature Box, Vegan Cuts, Fabletics, Yoga Surprise, The Runner Box, and Wantable.

It's the weekend, so why not enjoy some HEALTHY COOKIES topped with Manitoba Hemp Hearts

Seriously, this recipe makes everyone in my home happy! Even those who still willingly consume sugar on a regular basis! And for me, being sugar free for almost a year, when I make something like this it is such a treat for me! 

Made with lots of good ingredients like almond flour, coconut oil, and sweetened with honey! 

It's the perfect alternative for your kiddos, and a great way to still allow them to enjoy a sweet treat while also reducing the amount of sugar intake they are getting! (...these are SO GOOD they will never know the difference!)

Plus with the added hemp hearts on top, you are adding extra protein that is plant based, plus omegas which are amazing for everyone!

Honey Stinger Gingersnap Waffle---turned into Healthy Cookies!

Yep I did it! I took the Honey Stinger Ginger Snap Waffle, which I fell deeply in love with back in March-April when I was training for the Big D Half Marathon, and I made a Healthy Cookie taste (almost) just like them. Sugar Free, Grain Free, Healthy Gingersnap Cookies

Well, they weren't quite as tasty because they didn't have the yummy, chewy-ness inside of them, but still....for being a no-grain, sugar free cookie, these things were DANG GOOD!

You see, I never used to eat gingersnaps. I might have had one in my lifetime, but when I was at mile 6 during a training run and I tasted that Honey Stinger Gingersnap Waffle, I was like WOAH! Seriously incredible, and I had to have some Gingersnap cookies. 

So...I made it happen! 

And what a great way to celebrate NATIONAL RUNNING DAY too! Taking the best mid-run fuel that I have tasted and making it into healthy cookies and sharing the recipe with you! So run to the store, get the ingredients, and make these cookies to CELEBRATE! Plus, have absolutely no guilt while eating them.

I remember in 2012 when we ran the Disney Princess Half Marathon, we over heard someone say they run because they can. That one day they may not be able to, so for now, they run! And that really stuck with both my mom and myself! So true! I love that. So today I celebrate running, BECAUSE I CAN!
