HEALTHY Zuppa Toscana

Well hello!!! The saddest thing to me is when I find a meal I LOVE and I can't figure out how to tweak it!! I have been playing with Olive Garden's Zuppa Toscana….. I want to find a healthy version, as I LOVE this soup! Today I made it for the 2nd time using healthier ingredients, and I totally want to share with you guys! Of course, before we start.. I want to share a picture of my loves! They are too fun! The big brother had given sister a headband that she wore for 3 hours-- but the little lady won't leave one on for me longer than one minute!

So to start off.. I ALWAYS double this recipe… I do that so I can freeze some. I made it early this morning and fed some friends lunch, used it for dinner, have lunch for the husband tomorrow… and I have some in the FREEZER!

Ingredients:

1 Onion, chopped

3 Clove of Garlic, chopped

1 Pack of Bacon

1 pound of Italian Sausage

1 tsp. of Red Pepper Flakes (up to you if you want it spicy)

8 cups of Chicken Broth

3 Medium Turnips, remove skin, chopped (INSTEAD OF POTATOES)

3-4 cups of Kale, stems removed

1 cup of Almond Milk, Unsweetened (INSTEAD OF CREAM)

Salt and Pepper to taste!

First I sauté the bacon for about 7-10 minutes, then add the Italian Sausage!

Then I add the onion, garlic, red pepper. I cook for about 5 minutes.

Chop up your Turnips (seen below) IMG_5312

Add the chicken broth and turnips. Boil for about 5 minutes, then reduce to low. I usually simmer it for about 20 minutes.

Add the kale and almond milk. Kale is really based on what you think- I usually add more, because it is so great in this soup!

I brought everything to a boil then simmered for about 10 minutes.. then served! For my husband I added more red pepper flakes.. because he likes the HEAT!

I had NEVER cooked with turnips before this-- and actually this is the only thing I have used them for. They taste just like potatoes in this soup… and I am going to test them on other things such as mashed potatoes, baked potato.. just to see! Even if you think you will not like it, it is totally worth trying. The kale taste great! I think the bacon and sausage give it an awesome taste.

The broth is wonderful and I am floored that the Almond Milk works as well as the cream.. because that is what makes the broth so yum!
