Girl Scout TAGALONG Cookies [the Healthy Kind}

That's right you guys....I straight up did it again! 

Last year I made some bomb, sugar free, gluten free Samoa Girl Scout Cookies....you can snag that recipe HERE! 

And this year I just had to try another recipe, and Oh my word these cookies are amazing! Very simple to make, incredibly tasty, and gives you all the Girl Scout feels without all of the junk or added sugar! Plus with a little hidden gem in them! 

What could be hidden under all of this goodness you ask....??

COLLAGEN! 

I used the Collagen Hydrolysate from Great Lakes Gelatin, which is perfect for baking because it dissolves in water, and doesn't have to alternate any of the other ingredients. I love adding this stuff to just about anything I bake so that I make it healthier, and with so many added benefits.

TAGALONG Girl Scout Cookie Copy cat recipe! NO SUGAR, plus packed with Collagen!

TAGALONG [Sugar Free] Girl Scout Cookies

INGREDIENTS: 

  • 1/2 cup grass fed butter softened

  • 1/4 cup monkfruit

  • 1/4 cup Great Lakes Collagen Hydrolysate (GLGLife20 for 20% off)

  • 1 cup flour
  • 1/4 tsp pink Himilayan Sea Salt
  • 1 tbsp almond milk
  • 1/4 tsp pure vanilla extract
  • 1 cup all natural peanut butter
  • 2-3 teaspoons coconut oil
  • 1 pack [Sugar Free] Chocolate Chips

INSTRUCTIONS: 

  • Preheat the oven to 350, and line a baking sheet with parchment paper

  • In a mixer, cream together the butter and monk fruit. Once creamed together, add in the Great Lakes Collagen Hydrolysate

  • Add in flour and salt, and mix. Then add the almond milk and vinalla until blended

  • Taking a piece of parchment paper, put all of the dough inside of it, creating a long, 2" round log. (mine went the entire width of the parchment paper, about 1.5ft long, and 2" thick) Keep it in the  parchment paper and freeze for 15-20minutes

  • Take the log out and cut it into 1/4" thick circles (mine made about 33 cookies). Bake for 12-15minutes, then cool on a rack

  • Mix together the peanut butter and coconut oil, microwave for 15-30 seconds. (If you have a peanut butter that is already creamy/runny, SKIP THIS PART, and don't add the coconut oil. **Feel free to add another 1/4 cup of Collagen to the peanut butter as well here**

  • Place a 1/4" thick amount of peanut butter on top of the cookie, smashing it down so that it fills the entire top of the cookie. Freeze for about 10 minutes

  • Melt the chocolate chips in a bowl in the microwave. Cooking for only 15-30 seconds at a time and stirring to make sure they don't burn. Dip the cookies in the chocolate and freeze until the chocolate sets!
